Oats and pesto canapes


Oats are extremely healthy and packed with vitamins. Oats help in flushing out bad cholesterol, aid in digestion and keep us energetic throughout the day. High in fiber, oats help in weight loss too. I make savoury style oats quite often. Find my recipe of Italian style oats here. Apart from being a breakfast food, oats are excellent in smoothies, cookies, muffins and cakes. 


I don't know if I have mentioned this before but I am a Chartered Accountant. When I was studying for Ca exams, I had put on weight. Just after exams, I attended my cousin's wedding and looked really bloated up in saree. That was an alarm for me. I decided that I had to loose weight and make changes in my lifestyle. And that is how my life was taken over by exercising and eating in small portions 5-6 times a day. Most of the people tend to skip breakfast. Please don't do that. It is very important to have a healthy breakfast.



I love having smoothies for breakfast. It's filling, healthy and a great start to the day. All I have to do is add my favourite fruit, oats and some other ingredients in a blender and blitz. If you haven't tried making smoothies till now, try my recipe.




 

Let's talk about another breakfast recipe using oats which is "Oats chilla". It is a pancake recipe comprising of oats, semolina (sooji), yoghurt and spices. I have made several tiny pancakes to serve them individually with pesto. Crsip tiny pancakes with pesto can be a great starter when you have your friends and guests over. Have them as a party food or simply have for breakfast. 







INGREDIENTS





  1. Oats- 1 cup
  2. Semolina - 1/2 cup
  3. Curd - 1/2 cup
  4. Salt to taste
  5. Green chilli- 2 (finely chop using scissors)
  6. Red chilli powder -1/4th tsp
  7. Pesto- Recipe here

METHOD


  • Add oats, semolina, yoghurt and water in a bowl. Using a spoon, mix all the ingredients together to form a batter. Consistency should be like of dosa batter.
  • Season the batter with salt, green chilli and red chilli powder and keep aside for half an hour.
  • Heat a non-stick griddle/tava and pour spoonfuls of batter on griddle. 




  • Spread tiny bit of oil along the sides.
  • Cook both sides till brown and crispy.
  • Repeat with the remaining batter.
  • Garnish with pesto and serve hot.
