Caramelized Onion Crostini!

Caramelized Onions/ Onion Jam Caramelization of onion is a process which involves slow cooking of onions for 35-40 minutes over low heat. When you cook them slowly, natural sugar of onions caramelize making them intensely sweet and full of flavour. Caramelized onions are mostly used in French Onion Soup but they are beautiful in salad, crostini, tart and pizza too. Another name of caramelized name is onion jam which can be stored for about a week in refrigerator. INGREDIENTS 4-5 medium sized onions- thinly sliced 1 tbsp olive oil 1 tsp salt 1/2 tsp black pepper powder 2 tbsp balsamic vinegar/ white wine vinegar/ red wine vinegar/ lemon juice 1 tbsp sugar METHOD Heat oil in a non-stick deep pan and add onions once the oil is hot. Watermelon and Feta Salad! Come summer and we all start craving for water based fruits. In this heat, it's difficult to make elaborate meals in kitchen.  Salad is a great instant food which can be eaten as a light meal or snack. This salad is a Greek salad which is made using chunks of watermelon, fresh mint, soured onions and crumbled feta. Salty and creamy feta perfectly compliments sweet watermelon. Don't be surprised about adding onions to this salad, it's crunchy and sour taste makes this salad even more drool worthy. Summer is here and I keep craving for thirst quenching drinks to keep my body hydrated and cool. I am someone who adds mint to almost every dish. I even add it to my tea everyday, the flavour of tea becomes fantastic. Minty and earthy aroma of mint makes almost anything and everything delicious. Mint is known to calm stomach and copes with stomach pain and indigestion. It also helps to cure nausea and headaches. It is a natural stimulant, smell alone can help reduce fatigue and depression. Buttermilk is India's favourite summer drink . It's usually made by adding spices like cumin (jeera), ginger, salt, green chillies, coriander, pepper, curry leaves etc. It's pro-biotic nature is good for your stomach and improves immunity if taken regularly. Aam Panna (Raw Mango cooler)- Traditional Indian drink

AAM PANNA Aam panna happens to be traditional Indian summer cooler. It's made in most of the Indian households in summer especially where sun is shining at it's best. It is known to prevent heat strokes and is an effective remedy for heat exhaustion. Made from raw mangoes, this is an ideal drink for summers. Mint is my favourite herb. I somehow try to incorporate mint in as many dishes as I can. It's cooling and really beneficial during summers. I have added fresh mint to this drink, you can add dried mint too.
