Penne in white sauce with mushrooms

This pasta though! Yum! Creamy, cheesy, garlicky, salty and spicy!  I am really wondering as to why I haven't shared this simple and super delicious pasta dish till now. I mean really it is that good! Penne in white sauce is my brother's all time favourite and its the first thing he asks of me to make whenever he visits me from Rajasthan. Perfectly cooked pasta tossed in creamy, cheesy and silky smooth white sauce along with sauteed garlicky mushrooms, believe me when I say it- You are definitely in for a treat :D So delicious, comforting and satisfying! This is one of the quickest fancy meal you can prepare at home. All you have to do is prepare mushrooms and creamy bechemal sauce while you are pasta is boiling and then just toss everything together. Bechemal sauce is the star of this recipe which can be used in so many other dishes too, for e.g Veg Au-gratin, Lasgana, Soups. This pasta dish is also great for feeding a crowd, pair it ...

Penne Arrabiataa

Penne Arrabiata - my absolute favourite! Need I say more?? Arrabiata sauce is a spicy Italian sauce made with garlic, onion, pureed tomatoes and fresh basil. I have always talked about how much I love Italian food. Beauty of Italian cuisine is its simplicity and this spicy and tangy sauce is no exception. Just like other Italian dishes, this sauce too has few ingredients but packed with so much flavour from good extra virgin olive oil, tomatoes and herbs. Penne in Arrabiata sauce is a dish I have been making since my college time, almost 12 years now. Its a favourite among all my friends and everytime I make this pasta dish, they happily devour their entire plate. Served with warm garlic bread, its a complete meal in itself. Simple but spectacular! What I love most about pasta dishes is how ideal they are for busy weekday meals. Just with very little effort, you can create a delicious pasta dish in no time. Take for instance Pesto pasta , all you have to do is boil...

Favourite pasta salad

I love eating pasta, its the ultimate comfort food for me. Cooked al dente, accompanied with veggies and tossed in basic marinara or pesto, its a hearty meal which tastes divine. A good pasta dish doesn't need too many ingredients. That's the beauty of Italian food, simple yet delicious and bursting with flavours. Good quality olive oil, tomatoes, salt and pepper are enough to do the magic. If you ask me, I can just live on pasta and have it in the form of Penne in Arabbiata, Gnocchi in Marinara sauce, Pesto pasta, Spaghetti in marinara, pasta in alfrdeo sauce or tossed in just some extra virgin olive oil, garlic and parsley. This pasta salad is my favourite and it comes together in minutes. Its bursting with flavour of cherry tomatoes and balsamic vinegar. So delicious! This salad is made with balsamic vinegar dressing. Balsamic vinegar hales from Italy and has a sweet and sour fruity flavour. Its a vinegar which is made from grape juice. Balsamic vinegar when reduc...

Pesto fusilli with balsamic cherry tomatoes

Pasta to me is ultimate comfort food. Tossed up in flavourful marinara sauce or just olive oil+ garlic+ mixed herbs, I can very happily devour a massive portion anytime. Beauty of pasta dishes is that you don't have to do too much to it. It gets ready almost in a flash and each time you are in for a treat! This recipe is also on the same lines. While pasta is boiling away, prepare balsamic cherry tomatoes and fresh basil pesto. Its as simple as that. If you have pesto ready with you, then it won't even take that long. Serve it cold or hot, either way it tastes delicious and one of my favourite ways to eat pasta. FYI- I think pasta and pesto are made for each other! I didn't even realize when I started relating with Italian flavours so much. May be because I love tomatoes and Italian food to an extent revolves around tomatoes. It also might be because of the heavenly aroma of Extra virgin olive oil + garlic together which captivates the entire kitchen. Or may be ...

Gnocchi (hand made pasta) in Marinara sauce!

Gnocchi in Marinara Sauce If you are a lover of Italian flavours like me, then you must be familiar with what gnocchi is. Gnocchi is soft Italian dumplings or pasta which is made with soft dough of boiled potatoes, flour and seasoning. Dough is rolled and shaped into small ovals. Gnocchi is then poached in boiling water and added in desired sauce. Sauce can be as simple as brown butter with sage, pesto, marinara and alfredo. Italian food is all about simple flavours. Basil, tomatoes, extra-virgin olive oil, garlic are one of the staples of Italian pantry. Like any other recipe, gnocchi has many variations. Some recipes call for semolina, eggs, bread-crumbs too. It really depends on how you want to make it. You can experiment and even add spinach, pumpkin, ricotta, mascarpone. This recipe which I have used is eggless and gnocchi comes out beautiful. Marinara sauce is a classic Italian sauce. Marinara is just so wonderful. It is made usi...
