Detoxifying pesto minestrone soup

Would you look at the colour of this soup! Super-vibrant! Its made in one-pot in less than 30 minutes! Entire northern part of India is engulfed in really cold weather and there's nothing better than a hot and comforting bowl of soup on a chilly night. I love making different kind of soups in cold weather and you will find so many soup recipes like this Mexican black bean tortilla soup , Cream of mushroom soup , French onion soup and many more on blog. There's no denying the fact that I love love love pesto and this vibrant green and detoxifying soup was one more of an excuse to use pesto again in a recipe. It's loaded with vegetables and very simple and easy to make.You can use store-bought pesto to make this soup but I recommend using homemade pesto which can be easily made at home. Its New Years eve tomorrow! I love hosting the party at home and bringing in the new year with my close friends and family members.  Bruschetta bar is my go to appetiser cum dinner whenever I am having people over. It  satisfies both sweet and savoury taste buds. Its easy, quick to build up and hardly needs any effort. It is sure to impress your guests. Everyone will love it! Combinations are endless. Toasted slices of bread are served on a board with various dips,spreads,cheese,fruits and veggies of your choice. Its winter season right now so fruits like strawberries, oranges, grapes,guava,figs can be used. During summer I'd use peaches, cherries, melon and mangoes. Pesto fusilli with balsamic cherry tomatoes

Pasta to me is ultimate comfort food. Tossed up in flavourful marinara sauce or just olive oil+ garlic+ mixed herbs, I can very happily devour a massive portion anytime. Beauty of pasta dishes is that you don't have to do too much to it. It gets ready almost in a flash and each time you are in for a treat! This recipe is also on the same lines. While pasta is boiling away, prepare balsamic cherry tomatoes and fresh basil pesto.Its as simple as that. If you have pesto ready with you, then it won't even take that long. Serve it cold or hot, either way it tastes delicious and one of my favourite ways to eat pasta. FYI- I think pasta and pesto are made for each other! I didn't even realize when I started relating with Italian flavours so much. May be because I love tomatoes and Italian food to an extent revolves around tomatoes.
