Cream of Mushroom soup

I know winters have almost disappeared from Mumbai but northern part of India has suddenly started experiencing cold waves again. I really crave for soup in cold weather. I recently made this mushroom soup at my parent's place in Rajasthan. This soup is so so easy to make and so delicious. Its warmth is going to comfort you in this chilly weather. Mushrooms are my favourite vegetable. I love its earthy flavour and it comes out even better in this creamy soup. Even if you are not a fan of mushrooms, try this soup. It will win you over with its simplicity and creaminess, not to forget how delicious it is! It surprises me that I haven't shared a recipe using mushrooms in such a long time. My family is not really fond of mushrooms but if u ask me, I just need a reason to eat them! There are hundreds of varieties of mushrooms but sadly only button mushrooms are easily accessible in India. I love mushrooms in warm salads, crostini, soup, pasta, pizza, risotto. Since mushroom...

Comforting Barley Soup - Vegan

Soothing sun, warm clothes, scarves, piping hot makki  ki roti made on segree, these are some of the many things I miss in Mumbai.  My parents stay in Rajasthan, mother has been complaining. Sun hasn't come out since since a week. Every winter, my father cleans the segree so he can enjoy coal kissed tan on his hands. That dreaded moment when you have to step out of the warm quilt!  If only I could be there! Tucked in winter wear and wrapped in a shawl, I loved sipping on ginger tea, hot chocolate and comforting soups. As much as I hate summers, I really crave for winters here! ( big shout out to Meenu bhabhi) Hot soups are heart warming in cold weather, so comforting! Not that I am saying that I don't like regular tomato soup or vegetable soup , but change is always good. I had recently shared recipe of Thai soup Tom Kha which has been liked a lot by readers. Another favorite in Shah family is tangy Minestrone soup. Everyone loves it and when I add fresh basil, it...

Tom Kha -Thai Coconut Milk Soup { Vegan + Gluten free + Jain}

It is the onset of Winters - my favorite season! Although it doesn't get too cold in Mumbai compared to northern parts of India, I do enjoy the pleasant weather. Steaming bowl of soup is quite comforting on cold nights. It's a great way to increase intake of vegetables enriched with vitamins and minerals. Most of us tend to think that soups are to be enjoyed only during winters but that is just a boring myth. Soup can be eaten in any season and at any time of the day. Manish can eat soup for breakfast, lunch, dinner and even snack. There are some ingredients which Manish just won't have. As much as he hates coconut milk, I love it! Growing up, I wasn't really a fan of South Indian food but I always enjoyed grating coconut using the traditional Indian machete. Mother used to make a big bowl of chutney (most of which my father finished) to accompany dosa and vadas , leaving out some for rest of us. Tom Kha soup is a Thai coconut milk soup which is swee...

Minestrone Soup { Gluten-free + Vegan}

Its cold outside and I like tucking myself in a blanket in front of TV with a hot bowl of soup. Minestrone soup is a classic Italian soup.  Bursting with the flavour of tomatoes and fresh basil, this soup is loaded with vegetables.  Its one of my favourite soups.  I particularly love this soup because it's one pot magic! Its really simple to make and takes just about 30 minutes or less to get ready. Its perfect to make when you have people coming over. I make it all the time and everyone love it. All you have to do is saute some vegetables, add tomato puree and stock and let it bubble away.  If you are into Italian food like me, then this soup would pair really well with my Pasta salad , Fusilli pesto with cherry tomatoes , Margherita Pizza which I make with homemade Pizza dough , Bruschetta bar , Penne Arabiatta and Gnocchi in Marinara sauce . Steaming bowl of soup is all I want when it's chilly! It really is very comforting!! I can't tel...
