Cream of Mushroom soup

I know winters have almost disappeared from Mumbai but northern part of India has suddenly started experiencing cold waves again. I really crave for soup in cold weather. I recently made this mushroom soup at my parent's place in Rajasthan. This soup is so so easy to make and so delicious. Its warmth is going to comfort you in this chilly weather. Mushrooms are my favourite vegetable. I love its earthy flavour and it comes out even better in this creamy soup. Even if you are not a fan of mushrooms, try this soup. One more year comes to an end! This year has been very special. I took wedding vows with an amazing guy, had a beautiful holiday in New Zealand, gave my readers interesting recipes. It has rather passed fast. It's time now to ring in new year with friends and family. Mushroom and Spring Onion Barley Risotto!!

Happy Winters everyone! Just when I was thinking of what recipe to put next, Mom got barley from the market. It instantly urged me to make risotto using barley!  Pearl barley is barley with its husks taken off. Its a healthy high fiber, high protein whole grain having numerous health benefits. Once cooked, barley has a chewy and  nutty texture which is an ultimate comfort food. In India, pearly barley is commonly known as "ghooghree". My Mom makes delicious kheer also with it which is to die for! You can substitute rice with barley to make pulao or serve cooked barley with stir fried vegetables or curry. Risotto is an Italian dish. Traditional risotto recipe calls for Arborio rice but I was keen on trying with barley. I like simplicity in food so haven't added too many ingredients. Mushrooms happen to be one of my favorite vegetable because they have this sweet earthiness. Once  cooked, they taste delicious and succulent. It has a very distinctive flavor which can be brought about by adding just little butter or olive oil. You can use mushrooms in sandwich filling, pizza, pasta,soups,stir-fry.  Mushrooms particularly increase the strength of your immune system. It also helps in weight loss, fights against cancer and reduces cholesterol levels. Mushroom is one of the few vegetable which has Vitamin D which helps in absorption of calcium and phosphorous in bones. Its an ideal low energy diet for diabetics( they have no fat, no cholesterol). Summer always reminds me of school holidays back home in Rajasthan when all we did was played Mario the entire day! Summer also means Alphonsos!!! Do have seasonal mangoes, very good for liver unlike your coffee and tea. Having mangoes during the season replenishes liver for entire year. A very good morning to all you beautiful people! Hope you all enjoyed my first post and tried making the salad too. Heres hoping that the past couple of days have been great for you all :) I know a lot of people can get intimidated by the idea of cooking, especially men. They tend to think that cooking is tedious and takes away a lot of time. Apparently, that is not true.
