Zero oil Potato rosti

Who isn't a fan of potato! As mush as I love deep fried potato in the form of french fries or potato wedges, I prefer having  Roasted potato wedges   or Tandoori Aloo which is just as comforting and delicious as the deep fried ones. Potato gnocchi in Marinara sauce on the blog is also a celebration of potatoes which you must try- it's simple yet very flavorful. Coming back to this recipe, Potato rosti is a Swiss dish which is made by cooking grated potatoes with butter in a pan till both sides are absolutely crispy. It's served all over the world with an egg for breakfast or with a salad for light lunch.  Speaking of salads, there are so many salad recipes on the blog like this Thai Rainbow Noodle salad , Colourful Kidney Bean salad , Watermelon and tomato salad which are all great as light meals. You can even serve potato rosti with grilled paneer and sauteed vegetables for a complete meal. I love making healthier version of recipes and this Zero oil potato ...

Strawberry, beetroot and feta cheese salad with candied walnuts

The thing about salads are they make you feel so good. You can put tons of vegetables and fruits and mix them with exciting dressings. Its all about the dressing. Ingredients like mustard, apple cider, balsamic, extra virgin olive oil do wonders and take salads to another level. Herbs also play an important part and get that extra freshness throughout the salad. Honey and mustard dressing is one of the most popular dressing and I reckon its popular for a reason. Its mustardy, tangy, sweet and so delicious! Strong flavour of mustard packs an amazing punch even in your least favourite vegetable. This all purpose dressing makes for a great marinade too for barbecuing vegetables, meat or fish. This is one of those salads which has all kind of textures running through it. Tandoori Vegetable tikka

Weekends are for experimenting and trying my hand at something new! These tandoori vegetable tikkas happened in my kitchen over the weekend and hubby and brother-in-law went crazy swooning over it. Manish always gets elated when I cook Indian dishes, especially the ones which cater to his palate. Tikka more popularly famous as Paneer Tikka or Chicken Tikka is made from chunks of paneer, chicken or vegetables marinated in lush youghurt mixed with spices and then grilled in the oven to perfection. It is sprinkled with chaat maasala and lemon juice and thereafter served with coriander or mint chutney alongside some fresh crunchy salad. It can also be scooped into flatbreads and topped with salad and dip for a full meal. Vegetable tikka gets its gorgeous bright orange colour from yoghurt based marinade. Dried red chillies are soaked in warm water and turned into a paste by adding ginger and garlic. This red paste is mixed in thick and creamy yoghurt along with some other s...

Aloo chaat

Aloo chaat is a savoury potato snack which is a very popular Indian street food. Its one of those recipes which I enjoy only if my mom makes it. There are so many memories attached to it. Mom always makes it around festive season. I can't quite make it as well as my mother in terms of balance of flavours but I do manage to crack it pretty close. It's made by mixing boiled and fried potatoes with fruits and spices. Golden and crisp on the outside and soft in inside, its such a treat when potatoes soak up all the spices and juices released from fruits. Not to forget the freshness lent by mint. Versatility of potato is such that it can turn something so simple into so exciting. This sweet, salty, tangy and spicy chaat can be served as an appetizer/snack to your guests during Diwali. Diet: Vegetarian Serving : 2-3 Type: Appetizer/Snack/Light meal Ingredients 5-6 medium sized potatoes 1/4th cup cashews (cut into halves) 2 Tbsp ghee 1 Apple- peeled and chopped ...
