Minestrone Soup { Gluten-free + Vegan}


Minestrone soup, often with addition of pasta or rice is a favourite among Italians. Because of it's tomato base, Indians love it too. I particularly love this soup because there's no boiling, cooling, blitzing, straining and again boiling it involved! Whhhhooaaa...so much for soup??? That's just too much of an effort!! Packed with goodness of veggies, this soup is easy to make and gets ready quickly.

Arrival of monsoon is a reason enough for me to up my intake of soup. Steaming bowl of soup is all I want when it's raining heavily! It really is very comforting!!

There is no fixed recipe of this soup. You can pretty much throw in whichever vegetables you have on you like carrots, french beans, peas, cabbage, cauliflower, mushrooms, zucchini, bell-peppers, capsicum, celery, onions, tomato, kidney beans, broccoli.

Usually pasta is added in this soup but I have avoided pasta to make it absolutely healthy. 


  1. 3 big tomatoes- pureed
  2. 1/2 cup cabbage- chopped 
  3. 1 big onion- chopped
  4. 2 carrots- chopped
  5. 1/2 cup french beans - chopped
  6. 2 clove garlic- crushed
  7. 1 tbsp olive oil
  8. 1 tbsp dried mixed herbs
  9. Red chilli flakes- 1tsp
  10. Tomato Ketchup- 1 tbsp
  11. Few basil leaves
  12. Salt and pepper powder to taste
  13. Veg stock/Water- 2 glasses


  • Purée tomatoes and keep aside.
  • In a deep sauce pan, add olive oil. Once oil is hot, add garlic, onions and cook till onions are translucent.
  • Now add cabbage, carrots, french beans, salt, pepper, mixed herbs, chilli flakes and stir around. Cover with a lid and cook on medium flame for 5 minutes.

  • Stir in the tomato purée, ketchup and veg stock/water. Bring to boil and then simmer covered for 15 minutes.
  • Finally add basil leaves and then cook further for 5 minutes.
  • Serve hot.


  • Add rice or pasta to turn this soup into a complete meal.
  • Add lesser vegetable stock or water if you like thicker consistency.
  • Add grated cheese for extra sharp flavour.
  • Adding rice or pasta will release starch and make soup thicker itself.
  • Use macaroni for this soup if you want to add pasta.
