Pad Thai- Thai stir-fried rice noodle dish

Pad Thai as the name suggests is a Thai stir fry dish made with rice noodles and vegetables which is popular all over the world. It's perfect when you are craving for something spicy and delicious and don't have too much time to cook.  It hits all the right notes and like most of the Thai dishes, it's got great balance of sweet, sour and spicy. So So good! These noodles are saucy, peanut-y, crunchy, flavourful and super healthy. Bonus, these are vegan, gluten-free and gets ready in under 20 minutes. Its got lots of garlic, onion and crunch from carrots and french beans. I can't tell you how much I love this dish, I have been having it twice  every week off-late. Meet my new favourite salad- Rainbow Thai rice noodle salad! It's saucy, crunchy, healthy, hearty and loaded with colourful vegetables. Star of this salad is zingy peanut dressing which is to die for. It has the perfect balance of sweet-sour-spicy which makes it quite flavourful. Not to forget that it has just the right amount of garlic and peanut butter which is not too overpowering. It is so yummy that you would want to use it in other recipes too. It can be used  to marinate and grill vegetables or in a quick noodle stir-fry. It can also be used to make coconut milk based curry which can be eaten with rice. Really! The dressing is that good! Cold rice noodle salad in peanut sauce dressing is a perfect example of that.  Dressed in creamy and nutty peanut sauce, this salad will become your favourite on the go lunch/dinner/snack. Tom Kha -Thai Coconut Milk Soup { Vegan + Gluten free + Jain}

It is the onset of Winters - my favorite season! Although it doesn't get too cold in Mumbai compared to northern parts of India, I do enjoy the pleasant weather. Steaming bowl of soup is quite comforting on cold nights. It's a great way to increase intake of vegetables enriched with vitamins and minerals. Most of us tend to think that soups are to be enjoyed only during winters but that is just a boring myth. Soup can be eaten in any season and at any time of the day.
