Strawberry- Brownie Christmas Trifle (Eggless)

Trifle is an English dessert which is typically made by layering cake, fresh fruit, whipped cream and custard. Its a tradition to make Trifles on Christmas. Chocolate and strawberry is a combination which never fails.This trifle incorporates bright red strawberries with fudgy chocolate brownie and smooth chocolate ganache. Fresh strawberry coulis on top gives a tang to the trifle and jazzes it up. I love desserts in small glasses. Its so much fun to experiment and add layers of your choice. We celebrated Christmas in my society this Sunday. I was more than happy to make chocolate cupcakes and brownies for kids. Fruit and nut Chocolate bark

I  loved Chirstmas celebration in school. There were plays, dance performances and prayers which was followed by appearance of Santa. I still don't know who became Santa every year! One of the song we always sang was"Joy to the world, the lord has come!" Man, I am missing school and my friends now. I am no Santa but I come bearing this decadent Chocolate bark. This one is bold in flavours! Chocolate+ coffee+ raisins+ roasted almonds, I mean you have got to be from other planet if you don't like all these flavours together! Fruit n nut bar is one of my favourite so I thought of re-creating it by adding some coffee powder. It is so ridiculously easy to make and a perfect gift for you friends this Christmas. Lapsi - Gur ka Daliya (Broken wheat Porridge with Jaggery)

Lapsi is a traditional Indian dessert which is made with gur(jaggery) during special occasions. Since it is warm and comforting, it is made quite often during winters in the northern parts of India, especially Rajasthan and Gujarat. Its a meal cum dessert with goodness of nutty broken wheat and earthy jaggery. When I moved to Mumbai in 2005,  I stayed with my cousin for couple of months. She often made lapsi for dinner. It used to be cooked perfectly with right texture. Sweetness was also at par and not overwhelming. My mom did lot of trials but she couldn't get the recipe right. It is the onset of Winters - my favorite season! Although it doesn't get too cold in Mumbai compared to northern parts of India, I do enjoy the pleasant weather. Steaming bowl of soup is quite comforting on cold nights. It's a great way to increase intake of vegetables enriched with vitamins and minerals. I have avoided eating beetroot for as long as I can remember. A few months go, my mother offered me a par-boiled beetroot dressed in salt and lemon juice. It tasted great and I realized beetroot isn't that bad after all. Beetroot has a beautiful deep pink color and it very conveniently stains clothes, hands and utensils which I think is manageable.  Beetroot belongs to the family of spinach and both leaves and sweet round part of beetroot can be eaten. Do not throw away beetroot leaves rather use them as salad greens. Beetroot is gaining immense popularity among modern chefs and foodies . Roast it, blend it, drink it, pickle it - beetroot is a super-food which is full of vitamins, minerals and packed with powerful antioxidants.
