These loaded nachos are Crunchy Cheesy Tangy Slightly spicy Delicious Fresh and Packed with so much flavour! There’s just so much going on in these loaded nachos- crispy corn chips, tangy salsa, cheese sauce, corn, jalapenos, olives and other toppings of your choice. These loaded vegetarian nachos will become a party staple in your house whenever guests are over. It's an explosion of flavour in your mouth with nothing else like this to match up to! This recipe starts by first preparing  my Restaurant style salsa and 10 minute Nacho cheese sauce . Once that is done, all you have to do is to take a nice platter and arrange nacho chips and then add the cheese sauce, corn, jalapenos, olives, cilantro (coriander) and salsa one by one. Ultimate Restaurant style salsa

I bring to you the Ultimate restaurant style salsa recipe! It's so good that I have honestly lost count of how many times I have made it till now. It takes just 10 minutes and it's the only recipe of salsa you will every need, tastes much much better than the ones you get at restaurant. Its tangy, zingy, spicy and bursting with freshness of coriander and coriander seeds. When we talk about Mexican food, salsa really is quintessential to this cuisine which is served with tacos, burritos, nachos and many more dishes. Without salsa, no Mexican dish is complete and I just love how everyone keeps going for more of it and cannot resist it. This salsa is so delicious that once you make it, you will want a batch of it all the time in your refrigerator.(Stays good in fridge for 2 days) I love Mexican cuisine as much as I love Italian food. While Italian food is know for its simplicity, Mexican food is characterised by spicy, smoky, garlicky and sour elements. Mango salsa...

Mexican bean tacos with pico di gallo

Love Mexican food?  If yes, then you need these tacos in your life!! Mexican food has got to be my favourite! Nachos, Guacamole, Enchiladas, Tacos, Tostadas, Burritos..you name it and I love it! Also I think Pico di gallo which is a Mexican salsa is one of the most delicious relish ever. Its made with chopped tomatoes, onion, lots of coriander, chilli, salt and lemon juice. Its spicy, rustic and tangy all at the same time. Pairs really well with tacos, nachos, toasts, chips! Getting back to this taco, its filled with the most delicious re-fried kidney beans and pico de gallo. Since I love feta cheese, I finished the tacos with it.You can go for the classic option sour cream too and even add guacamole or sliced avocados. Re-fried beans which are used in most of the mexican recipes can be easily prepared at home. Its called re-fried beans because after boiling they are again cooked with tomato and onion to make it more flavourful. These re-fried beans will be great a...

Pan-roasted potato tacos with mango salsa

Taco is a traditional Mexican dish of wheat or corn tortilla which is stuffed with different exciting fillings. Its a Mexican street food and the moment you eat it you get tons of flavours in your mouth. Fillings can be anything from meat, chicken to lentils and vegetables. Tortilla is like our Indian chapati but just smaller in size. You can use store bought white or yellow corm tortilla but I recommend making simple whole wheat tortillas at home.  I love experimenting and making different tacos. For this recipe, I pan roasted some cubed potato in spices and then finished it with tangy Mango salsa and Yogurt-Mint sauce. The flavours worked out really well.  This taco is hearty, satisfying, healthy and super delicious. Meals like these are my favourite as I don't have to do too much cooking. Its an easy and quick to make weekday meal especially when I am craving something flavourful yet healthy. I often make Roasted Vegetables tacos with hummus too for my d...
