Bruschetta board

Its New Years eve tomorrow! I love hosting the party at home and bringing in the new year with my close friends and family members.

Bruschetta bar is my go to appetiser cum dinner whenever I am having people over. It  satisfies both sweet and savoury taste buds. Its easy, quick to build up and hardly needs any effort. It is sure to impress your guests. Everyone will love it!

Combinations are endless. Toasted slices of bread are served on a board with various dips, spreads, cheese, fruits and veggies of your choice. Its winter season right now so fruits like strawberries, oranges, grapes, guava, figs can be used. During summer I'd use peaches, cherries, melon and mangoes.

Here's some of my favourite bruschetta combos which I have shared in this post

Pesto+marinated cherry tomatoes+feta cheese

Strawberry+feta+basil+balsamic vinegar

Caramelised onion+pesto+feta

Mexican salsa

Guava+gouda cheese+honey

Basil Pesto (Recipe here)
Caramelised onion (Recipe here)
Mexican salsa
1/2 cup marinated cherry tomatoes
1 cup strawberries- halved
1-2 Guava-sliced
1 Banana-sliced
slices of cheese
Manuka Honey
8-10 Walnuts
Basil leaves

Pesto+marinated cherry tomatoes+ feta

For marinated cherry tomatoes, slice tomatoes in halves and mix with olive oil, salt and pepper.

Spread pesto on toasted bread and top with cherry tomatoes and feta cheese.

Strawberry+feta+basil+balsamic vinegar

Spread feta cheese generously on toasted bread and top with sliced strawberries, basil and tiny bit of balsamic vinegar.

Caramelised onion+feta+pesto

Spread caramelised onion on toasted bread and top with feta cheese and pesto

Mexican salsa

To make salsa, finely chop onion and tomato. Now add chopped coriander, salt, red chili powder, lemon juice and mix together.

Spread salsa over the toasted bread

Arrange sliced banana, walnuts on bread and drizzle honey.

Guava+ gouda cheese+honey

Arrange cheese slices and guava over toasted bread.

I also like adding hummus, green goodness coriander hummus, muhammara, cream cheese, guacamole, sour cream, marinara sauce in my bruschetta bar along with other toppings like sauteed mushrooms, bell peppers, figs, pomegranate.

Some points to remember

Ensure that you toast your bread crisp. Its best to toast bread on a hot griddle without using any oil or butter.

Fruits and cheese go really well together. For instance, feta cheese goes well with fruits like guava, strawberry, figs and grapes.
