Addictive Mango salsa (Vegan + gluten-free)

I love salsa. My all time favorite salsa is this tomato and onion salsa which I make to go atop toasted bread. Crunchy bread accompanied with creamy garlicky hummus and zingy fresh salsa makes you wanna keep eating it! Trust me when I am telling you that its probably one of the most delicious and easiest appetizer you can serve at a party. What goes on in mouth is really a riot of flavours!

There are times when hubby demands for a big bowl of it just to gobble it down as a salad. I mix it with lots of lime juice, salt, red chili powder and coriander. Power of coriander and lemon juice to spike up almost anything and everything does not cease to amaze me!

Hubby loves salsa and I love mangoes. This easy and delicious salsa I made last weekend for TV night is packed with tongue-tickling flavours. Its a perfect combination of textures and flavours. While onions give crunch, mango lends sweetness. Pickled jalapeños and lime juice cuts the sweetness and balances all the flavours by imparting tartness. This salsa is my new favourite way of eating mangoes.

Mango pairs well with pretty much everything. It has such a gorgeous flavour! It can be used to make smoothie, milkshake, salad, ice-cream, pudding, cake, cheesecake. With mangoes in season, I have been enjoying them everyday in the form of this incredible Mango-chia seed pudding and Tropical Mango-spinach smoothie for breakfast.

Mouth-watering mango salsa loaded with mangoes and amazing flavours. Goes well with khakhara (cripsy Indian flatbread), pita chips, tortilla chips, nachos, potato wedges, tacos and grilled meat and seafood.

Serving- Makes about 2 cups
Type- Appetizer/Condiment
Diet- Vegan and Gluten-free

Ingredients

2 chopped Mango
1 finely chopped onion
1 finely chopped tomato
juice of 1/2 lemon
1 finely chopped green chili
3-4 slices of pickled Jalapeneo
salt to taste
2 Tbsp chopped coriander

Method

Tip in all the ingredients in a bowl and lightly mix together.

Make sure to not be vigorous and squish mangoes.

Serve immediately.

Salsa is great with chips but it is even better atop tacos, wraps, grilled meat and seafood. You can even have this salsa as a salad straight from the bowl. I love having it with khakhara for a healthy small meal after I come back from work.

Some tips

Be gentle with mangoes while chopping.

Control the heat factor by adding less or more chilli.(I added one green chilli and my mouth was on fire which by the way I enjoy!)

Add salt just before eating otherwise salsa will become very watery.
