Hassleback Cheese Potatoes

You will be lying if you say that you are not fond of potato. Deep-fried, roasted, mashed, boiled- everyone loves it! Most of the popular Indian dishes like masala dosa, vada pav, aloo ki sabzi, samosa, aloo parantha, aloo tikki are made using potato. Potatoes are cooked every single day in most of the Indian households. 





Apart from the Indian dishes, potatoes are extensively used in making very popular french fries and wedges which are deep fried. Have you ever thought of baking potatoes to get the crisp texture?

I have found the prefect appetizer ever -Hassleback cheese potatoes! I had never eaten potatoes cooked this style before. If you often crave for crisp potatoes then these are the perfect potatoes you could ask for. Filled with cheesy goodness, they are just too yum- crisp on the outside and soft inside!



Hassle-back potatoes first originated in Sweden in a restaurant called Hasslebacken. It is a potato which is sliced across almost till the bottom and baked until layers spread out and become crispy. Added bonus is these are baked rather than fried- a rather clever disguise! 





Diwali is around the corner and your kids are going to be home enjoying their Diwali-break.Crisp potatoes loaded with cheese and topped with your favourite toppings can be served as an appetizer, side-dish or even eaten as a snack at any time of the day. Best part of this dish is you don't have to slog in the kitchen. While you are busy cleaning the house and doing all sort of Diwali prep, just slide baking tray in the oven to please your kids and do your own thing.





Slather them with toppings like fresh home made salsa, mustard sauce, creamy Greek yoghurt, spring onions, ketchup, jalapeños and tuck in. Perfect for a game day! 

My favorite topping is mustard and ketchup! Yummers :)


Ingredients


3 medium sized potatoes
Butter for greasing potatoes
3 Cheese cubes - sliced
Garlic paste (Store bought/ chopped garlic)
salt 
black pepper powder
Mustard sauce (optional)





Method

Wash potatoes and dry them.

Slice them across but don't slice right till the end. Make sure all the slices stay connected.


Arrange potatoes in a baking dish.


Grease them with butter using a pastry brush. Make sure butter slides into spaces between slices.


Bake in a preheated oven at 220 degrees for 30-40 minutes.


Season cheese slices with salt and pepper powder. 


Using a spoon, slide garlic/garlic paste between the slits and fill with cheese slices.


Bake again till cheese has melted.


Top with mustard and ketchup! Dig in! :D
