Roasted vegetable and grape salad with orange- garlic-mint- dressing



Roasted vegetable and grape salad with this unbelievable orange-garlic-mint- dressing!  Easy , satisfying and so delicious. It's hearty, filling and great for lunch/dinner. Grapes and pomegranate just burst in your mouth and makes this salad even more delicious and balanced.

I am pretty sure that most people don't find broccoli and cauliflower scrumptious especially in a salad but please take my word and try this salad soon! Its gonna totally change the way you look at these two vegetables.


Lately I have been obsessed with roasted vegetables! They are so easy to make and taste so incredible. You can add roasted vegetables in sandwiches, wraps, buddha bowls or simply toss it in sweet-sour dressing and have as a meal.

Roasting makes the vegetable crispy on the edges, slightly charred and incredibly appetizing. So so good! Some of the vegetables which taste the best after roasting  are onion, beetroot, broccoli and cauliflower. Yes you heard me right cauliflower! Its probably my least favorite vegetable but the magic that roasting does to it- I cannot stop eating it.


This salad has color, texture and not to mention tons of fiber and vitamins from all the different vegetables. It's low in fat, carbs and that's why ideal for weight loss too.

It has this amazing orange-garlic-mint dressing which not only packs amazing citrus-y punch but is also very refreshing. Mint and garlic taste heavenly together and combination of orange, mint and garlic is so good that it's become my new favorite salad dressing.


If you are looking for more ways to up your vegetable or salad intake, then I highly recommend you try this vibrant and scrumptious salad. Easy to put together but so big in flavors.

I love eating salads because they are loaded with so many nutrients and vitamins. There are so many ways to make salads interesting and more delicious like this fruit based vinaigrette I use in Mango salad with mango-mint dressing. You can grill fruits and veggies and add in salads just like this Mexican Grilled Pineapple salad. Salads can have different themes like Italian, Thai, Moroccan, Lebanese, Mexican etc etc.


Colorful, hearty and filling salad with orange-garlic-mint dressing- delicious and so easy!

Type: Appetizer/ Light meal
Diet: Vegetarian
Serving size: 2 portions

Ingredients

1/2 cup cauliflower florets
1/2 cup Broccoli florets
1/2 cup chopped carrot (Diagonal shape)
1 chopped Beetroot
1/2 cup sliced black/white Grapes
1/4th cup Pomegranate aerials
1 cup washed and chopped Lettuce (Can use Romaine, Arugula too)
2 Tsp Extra virgin olive oil
1 tsp chilli flakes
salt to taste

Dressing

1 Tbsp extra virgin olive oil
3 tbsp orange juice
1/2 tsp orange zest
1 tsp lemon juice
1 tsp honey
1 small onion- finely chopped
1 tsp mustard sauce
2 tbsp finely chopped mint
1 tsp chilli flakes
Salt to taste

Method

Blanch broccoli and cauliflower florets in salted for 5-10 minutes and strain under cold water. Rinse properly and set aside.

Now add cauliflower, broccoli, beetroot and carrot in a bowl and toss with olive oil, salt and chilli flakes in a bowl.

Spread veggies in an oven tray and place in a pre-heated oven at 200 degrees for 10-15 minutes and toss once in between.

Prepare dressing by adding all the ingredients in an air-tight jar and shake everything together.

Once veggies are charred and about done, add in a salad bowl and toss with the dressing. (Reserve some dressing to drizzle later)

Once salad is slightly cold, add chopped lettuce, grapes, pom and rest of the dressing.

Toss everything again together and serve.
