How nice would you feel if your breakfast is ready as soon as you get up! Overnight chia seed pudding is an amazing no-cook breakfast which makes you feel full for a long time. Soak them in milk/coconut milk/almond milk just before sleeping and put in refrigerator overnight. Next morning, top it with some nuts and seasonal fruits and it becomes one of the healthiest breakfast you could have.
Chia seeds swell up in liquids, become wobbly and lend a creamy texture throughout. Best part about chia seeds is they go well with pretty much everything and flavour possibilities are endless.
I have previously shared Mango and chia seed pudding which oozes with tropical flavors of mango and coconut. Naturally sweetened coconut milk perfectly compliments sweet and sour mangoes. Tastes heavenly!
Chocolate and banana together are one of my favourite dessert combination. Nutella-Banana grilled sandwich which was one of my first posts here on the blog is my and my brother's ultimate comfort food. Whenever I want to indulge into something sweet,I turn to this sandwich.
But for breakfast I would rather want a healthier option. I recently tried another variant of chia pudding in the form of creamy chocolate pudding and loved it as much as the previous pudding. Its perfect when you want to indulge in a sweet but healthy dessert.
Creamy chocolate pudding made with chia seeds and banana. Perfect for breakfast, snack or a dessert!
200 ml coconut milk/almond milk/milk
2 Tbsp cocoa powder (unsweetened)
2 Tbsp maple syrup (Use honey/sugar if not vegan)
2 Tbsp chia seeds
2 sliced bananas
Grated dark chocolate-garnish
Add coconut milk, cocoa powder, maple syrup and chia seeds in a bowl and mix well. Cover with a lid and slide in refrigerator for atleast three hours or overnight.
Serve it in bowl or glass. Pour half of pudding in a glass and arrange sliced bananas over it. Repeat this process again.
Grate some extra dark chocolate and serve.
