Roasted Red Peppers!

My life revolves around food. I have always enjoyed cooking but real passion  for eating and cooking developed only 3 years back. Had I realized it sooner, I would have wanted to become a pastry chef. I definitely wouldn't have been a Chartered Accountant today.

Roasted Red Peppers stuffed with tomatoes





This is one of those recipes that makes you realize how delicious simple food can be! The dish uses only 5 ingredients and flavor keeps getting more enhanced with every bite. Charred sweet bell pepper perfectly compliments the sour tomatoes. Once you make it, you won't be able to keep yourself from making it again!


Ingredients ( Serves 1)





1. One Red Bell Pepper - Cut into two halves
2. 2 Tomatoes- Peeled and chopped
3. Salt
4. Pepper
5. Extra Virgin Olive Oil - 2 Tbsp
6.Jalapenos- for garnish


Method


Preheat the oven at 180 degrees celsius for 10 minutes. Now place two halves of bell pepper in a deep dish, cut side- up. Stuff with chopped tomatoes and sprinkle salt and black pepper. Drizzle olive oil and bake in oven at 200 degrees for about 20-25 minutes till the peppers wilt away properly. Little char is ok but make sure that they don't burn. Garnish with jalapenos for that extra tang.
