Cream of Mushroom soup


I know winters have almost disappeared from Mumbai but northern part of India has suddenly started experiencing cold waves again. I really crave for soup in cold weather. I recently made this mushroom soup at my parent's place in Rajasthan. This soup is so so easy to make and so delicious. Its warmth is going to comfort you in this chilly weather.

Mushrooms are my favourite vegetable. I love its earthy flavour and it comes out even better in this creamy soup. Even if you are not a fan of mushrooms, try this soup. It will win you over with its simplicity and creaminess, not to forget how delicious it is!

It surprises me that I haven't shared a recipe using mushrooms in such a long time. My family is not really fond of mushrooms but if u ask me, I just need a reason to eat them! There are hundreds of varieties of mushrooms but sadly only button mushrooms are easily accessible in India. I love mushrooms in warm salads, crostini, soup, pasta, pizza, risotto. Since mushrooms have a meaty texture, they make for a good substitute of meat.


Often grouped with vegetables, mushrooms are low in calories, gluten-free and provide important nutrients. They are the only source of Vitamin D among fresh produce. If you are trying to loose weight, mushrooms will surely help since they are filling and fat-free.

This soup comes together in  minutes and perfect in this cold weather or when you have last minute guests at home for lunch/dinner.There is no boiling, grinding and straining involved.



This creamy mushroom soup is so easy to make that you will stop ordering it in restaurants and make it repeatedly at home.

Serves 2-3

Ingredients

1 Tbsp Olive oil
1 Tsp chopped garlic
1 chopped onion
1 cup sliced mushrooms
1 Tsp flour
3/4th cup milk
1/2 cup water/veg stock
2 Tbsp Cream
salt to taste
1/2 tsp black pepper powder


Method

Heat olive oil in a deep sauce pan. Add garlic, onions and cook till onions become transparent in colour.

Now add mushrooms, cover with a lid and cook on medium heat till mushrooms soften down. Once mushrooms become soft, stir in flour and cook for 3-4 minutes on medium heat.

Pour veg stock/ water and milk in the pan and bring to boil. Turn heat down and simmer for 10 more minutes.

Season with salt and black pepper powder.

Finally mix in cream, simmer just for about 2 mins and serve hot with croutons.


TIPS

If you are eating soup later, you might need to thin it down with water/milk.

Make sure to not burn the flour and stir it continuously with mushrooms till you add water and milk.
