Roasted tomato soup

This the season to have hot soups!! January calls for this hearty Roasted Tomato Soup.

Getting back to this delicious and healthy soup, by popular demand, I am sharing recipe of one of my favourite soups in this post today"Roasted Tomato Soup".


I love the kind of comfort and warmth soups provide during chilly weather. With its bright orange colour, it is sure to become your favourite too. It is thick, creamy, garlicky, tangy and full of smoky tomato flavour. I guarantee that you will never wanna get back to regular tomato soup. I really like to keep the consistency of this soup quite thick but you can always thin it down if you so wish.



Its perfect to make when you have people coming over. You just let oven do its job and char tomatoes and onion. Then all you have to do is blend it and serve. It pairs well with my quick dinner recipes like Pesto fusili with cherry tomatoes, Penne Arabiatta, Mushroom and Pepper tacos with hummus and also appetisers like Roasted Potato wedges, Tandoori Vegetable Tikka and Hassleback Cheese potatoes.





Healthy, creamy,tangy and satisfying Roasted Tomato Soup! 

Ingredients

7-8 tomatoes- cut into quarters
2 Onions- cut into quarters
3 cloves of peeled garlic
2 Tbsp extra virgin oil
Salt to taste
1/2 Tsp black pepper powder
1/2 Tsp chili flakes
1-2 Tsp sugar
1 Tbsp butter
3 cups veg stock/water

Method

Preheat oven to 250 degrees

On a baking tray, spread chopped onion,tomato and garlic. Drizzle olive oil and sprinkle salt, black pepper powder.

Roast in oven for 20-30 minutes on 250 degrees till tomatoes get a nice char and start releasing juices.

Transfer to a pot and add veg stock/water along with red chilli flakes and sugar. Blend with a hand blender until smooth.

Return pot to gas stove and heat on medium flame. Add butter and adjust the seasonings.

Garnish with cheese and coriander leaves. Serve hot
