Shabnam curry

Shabnam curry is a restaurant style Indian dish of mixed vegetables simmered in tomato and yoghurt based gravy which makes this dish rich and creamy. Addition of nigella seeds and dried fenugreek makes this dish super fragrant which explains the distinctive name of this curry. This vibrant curry is saucy, spicy, tangy and mildly sweet all at the same time. Such a flavour bomb! And so so easy to make. Perfect for weekday meals when you are craving for something different but at the same time doesn't require too much effort and time to cook. I often make Matar Paneer , Chana masala and Dal mooli too for weekday meals to break the monotony of regular sabzis. This curry goes well with chapati, naan and tandoori roti. It tastes equally good with rice too. What I love abut this dish is you can add whichever vegetables you have in your fridge. I have added corn, carrots, cauliflower and peas. You can go ahead and add other veggies like broccoli, peas, mushrooms, babycorn, bel...

Matar paneer (No onion/garlic)

Matar paneer is a delicious Indian curry prepared with cottage cheese and peas which are usually simmered in tomato and onion based gravy. This curry tastes equally good when its made with tomato based gravy minus onion/garlic. Cashews make this dish super creamy and also balance tangy tomatoes with its sweetness. It pairs really well with flatbreads like chapatis, naan, tandorri roti, parantha and rice. I love eating it next day with bread. I feel it tastes even better the next day, somehow flavour develops more. Its hearty, healthy, flavourful and perfect for weekday meals. Matar Paneer is one of my favourite Indian curries. As a kid, I was kinda fussy when it came to eating roti sabzi but I would always get excited at the sight of matar paneer. This creamy matar paneer made with tomato and cashew based gravy is a regular in our house specially during festivals like Diwali, Holi, Sankarat and Navratri when we avoid using onion and garlic in kitchen. Since Navratri is...

Eggless whole wheat chocolate pancakes

Breakfast is my favourite meal of the day. There's nothing better than starting your day with a healthy and delicious breakfast and if its easy to make then even better. Today I am sharing recipe of these fluffy and delicious Eggless whole wheat chocolate pancakes. They are nutritious, wholesome and insanely chocolatey. Made with very little sugar and almost no butter, these are perfect for your lazy weekend breakfast. Pancakes are traditionally made with eggs, milk and flour but I have used wholewheat flour and yoghurt in this recipe to make pancakes healthy. Toppings can be honey, chocolate sauce, maple syrup, fruits and nuts of your choice. Since strawberries are in season, I have added strawberries and some chocolate sauce for more decadence. But you can go classic route by drowning your pancakes in honey or maple syrup. If you have ever given a look at my recipe index, you would know that Smoothie is my favourite breakfast. Strawberry Pineapple layered smoothie , Man...

Thandai

Thandai is a traditional Indian milk based drink served cold. It is made by blending almond paste with other spices like cardamom, black pepper, fennel seeds, poppy seeds, melon seeds, saffron and mixing in milk. Holi announces beginning of summer in India and Thandai is consumed on Holi to cool off the body especially after playing with colours all day and relishing festive sweets and snacks. I must admit that when I first tried it, I wasn't sure how it would turn out. But to my surprise, it turned out amazing in the very first trial. It tastes much much better than the store bought thandai mixture and the best part is you can add more or less spices and modify it according to your taste. Some people like it hot and add more black pepper while others prefer more prominent flavour of fennel in it. Having lived in Rajasthan, this delicious and aromatic thandai drink made with  cooling ingredients like poppy seeds, melon seeds and fennel kept the body cool and prote...
