Thai Pineapple salad



Come summer and all I want to eat for lunch is a good salad. Pineapple is one such fruit which is loaded with Vitamin C and tastes refreshing, fresh and is incredibly juicy and fruity. This Thai Pineapple salad is perfect for hot days and is an amazing mix of sweet, sour, spicy and has got great crunch. It's filling and at the same time packed with Vitamin C to build up immunity.

Thai cuisine has got to be one of my favorite cuisines. It’s incredibly healthy, spicy, sour, super flavorful and uses tons of aromatics and herbs like lemongrass, galangal, kaffir lime leaves, basil, mint, coriander. Peanuts and peanut butter is also used extensively used in Thai cuisine to enhance the flavor and crunch factor. 

Som Tam salad, Tom Kha ghai soup, Pad Thai and Thai noodle salad with peanut sauce are my personal favorites and so many people have tried the recipes of the same from blog and loved the dishes. 



I make sure to incorporate lot of interesting salads in my everyday  diet which are loaded with fiber and vitamins. Give me a salad anytime of the day and I am a happy girl! Contrary to what people believe, salads don't have to be boring. Salads can be loaded with protein in the form of tofu, cottage cheese, chickpeas, kidney beans and other legumes and turned into a healthy and filling meal. You can make healthy dressings with condiments like mustard sauce, honey, different kind of vinegars, hot sauce which makes salads incredibly delicious.


RECIPE
 
Diet: Vegetarian
Type: Appetiser/Light meal
Portion: Serves 2-3 people

Ingredients
1 cup chopped pineapple
1 cup roughly torn romaine/ice berg lettuce 
1/2 cup halved cherry tomatoes
1/2 cup sliced cucumber 
1/2 cup sliced onion 
1/4th cup salted crushed peanuts 
Chopped coriander

Dressing
2 tsp olive oil
2 tsp schezwan sauce
1 tsp soy sauce 
1 tsp honey
1 tsp lemon juice
3/4th tsp salt 

Method

To make dressing, add all ingredients in a small air tight container and shake it to emulsify.

In a salad bowl, add pineapple, lettuce, cucumber , cherry tomatoes, onion, peanuts and coriander.

Pour the dressing , mix everything together.

Garnish with some more crushed peanuts and serve.

    Ingredients:

    1 ripe pineapple, peeled and cubed
    1 cucumber, thinly sliced
    1 red bell pepper, thinly sliced
    1 small red onion, thinly sliced
    1 small carrot, julienned
    1/4 cup fresh cilantro leaves, chopped
    1/4 cup fresh mint leaves, chopped
    1/4 cup roasted peanuts, crushed
    2 tablespoons lime juice
